Put it on the BBQ grill, with the skin side facing down. Grill it on medium heat for 5 minutes. Now baste the chicken with sauce and when it becomes crispy, you can turn it over. You should cook it for 5 more minutes. Using a grill lid, cover and cook it for 15 more minutes. Turn the chicken over repeatedly untill it cooks thoroughly. When serving, discard the marinade.
Barbecued Marinated Swordfish
Ingredients
- 4 cloves garlic
- 75ml of white wine
- 4 tablespoonful of lemon juice
- 2 tablespoonful of soy sauce
- 2 tablespoonsful of olive oil
- 1 tablespoonful of savoury seasoning
- 1/4 teaspoonful of salt
- 1/8 teaspoonful of ground black pepper
- 4 swordfish steaks
- 1 tablespoonful of chopped parsley, for garnish
- 4 lemon slices, for garnish
Preparation
In a baking dish, beat together the lemon juice, garlic, white wine, soy sauce, savoury seasoning, olive oil, pepper and salt. Put swordfish steaks in the marinade, and then refrigerate for about 1 hour. Preheat the barbecue until it gains high heat, and then oil the cooking grate. Barbecue the swordfish steaks for about 5 minutes on both sides. Garnish with lemon and parsley wedges and then serve.
Eggplant rolls with feta, chili and mint
Ingredients
- Olive oil
- 1 lemon
- 2 eggplants (aubergines)
- 1 red chili, deseeded
- 300g feta cheese, crumbled or cut into cubes
- 1 bunch of mint, roughly chopped
- Cocktail sticks
Preparation
Mix the fresh mint, chili and lemon juice in a bowl. Add the feta and stir till it’s fully coated. Now using a clingfilm, cover and refrigerate. Cut the eggplants lengthways but discard the ‘outside’ slices. After that, brush olive oil over each side of the slices as well as on the hot barbecue part till its lightly coloured.
Remove it from the barbecue and put one teaspoon of the feta mix over each eggplant slice. Roll the eggplant around the feta mix and then push the cocktail stick through in order to secure it. Place the rolls on a plate and serve.

Then shape it into 1 inch balls. Now, microwave a few candy melt flavored chips and dip the firm chilled balls into it. After dipping, place them of a wax paper and refrigerate them again.
You can also pick up prepackaged no-bake cookies from any grocery store and just follow the instructions given on them. Most of them will only require adding water and butter and then finally refrigerating it.
